A slightly unorthodox caesar dressing is the star here. Flavours of caper, Dijon mustard & oil-packed sun-dried tomatoes shine.
Some of my earliest memories of cooking are of my Dad and I making caesar salad. His mom, my nana, passed a variation of this recipe to him and he, in turn, passed it to me. The made-from-scratch dressing is the true star of this dish.
I've brought this caesar (deconstructed then assembled on location) to a number of get-togethers with friends/family and it never fails to elicit a request for the recipe. Please enjoy this dish that is close to my heart, not only because it helped to kick-off my love of cooking, but also because it's so damn delicious I eat it again and again.
For the dressing
Using an immersion blender, mix all the ingredients. Donesies.
For the salad
In a large bowl mix all the ingredients plus the above dressing. Double donesies.
